Origin: India. Anethole is the compound that gives star anise (& similarly aniseed) its distinctive flavour. Weight for weight, anethole is 13 times sweeter than table sugar. Anethole is present in very high concentrations in anise flavoured liquors. It is responsible for the dramatic clouding that occurs when water is mixed with these spirits, as anethole dissolves in alcohol, but not in water. So when the water dilutes the alcohol, the anethole molecules cluster together in bunches large enough to scatter light
